  • 01 Out at first light on a Highland pony, glassing the corries for a stag worth the stalk.
  • 02 Once you've found him, the last stretch is on foot, downwind, low, and slow.
  • 03 Taken clean, then carried home the old way, on horseback across open ground.
  • 04 That evening, it goes straight to the kitchen, where supper is built from what you took and whatever the land gave up nearby.
  • 05 The taxidermy is ours to handle. The mount follows you home once it's ready.

Expect full days on foot across steep, uneven Highland ground, often in poor weather. A genuine, reasonable level of fitness is required. This isn't a trip you can phone in.

The Setting

Based near Scourie, on the edge of the map.

Scourie sits on the far northwest coast of Sutherland, more lochs and mountains than people, with Ben Stack, Foinaven and Arkle standing over the bay. It's some of the last genuinely wild ground in Britain: empty, quiet, and exactly the kind of country a stag like this belongs to.

There's no real signal, no crowds, and no manicured trails. Just open hill, peat bog and rock that hasn't changed much in a few thousand years.

A day on the stalk looks like this.

No two days are identical (the weather and the deer decide that), but the shape of it rarely changes.

Beyond The Stalk

You leave knowing the land, not just the trophy.

A different local expert joins the group each day, so the stalk is never the only thing you come away having learned.

  • 01 A geologist walks the ground with you, explaining how these particular mountains, glens and lochs actually came to look the way they do.
  • 02 A local historian covers the land's history: how this stretch of Sutherland has been settled, worked and fought over for centuries.
  • 03 A forager teaches you to actually identify what's edible and what isn't, out on the ground rather than from a book.
